2Step 4: Incorporate the Filling and Shape
Once the dough has risen, it’s time to add the signature filling. Drain the soaked raisins and pat them dry. Toss them with the candied orange and lemon peels to distribute them evenly. Lightly deflate the risen dough and turn it out onto a floured surface. Flatten it slightly and sprinkle the prepared fruit mixture over the top. Fold the dough over the filling, gently kneading to distribute the fruits evenly throughout. Be careful not to overwork the dough, as this can impact its lightness. Shape the dough into a smooth ball and place it into your prepared mold or baking pan. Cover it again and let it rise in a warm spot for another one to two hours, or until it fills the mold and reaches the desired height.
